When you have a nice, fresh-caught fillet of sea bass, you really want to help bring out those clean, fresh flavors. By adding just a few simple ingredients like butter, garlic, lemon juice, and fresh cilantro, you can take an ordinary piece of sea bass and elevate it to 5-star status instantly.


  • 2 sea bass fillets
  • 1/2 cup of lemon juice for marinating
  • 1 pinch of salt
  • 1 cup of olive oil
  • 10 cloves of garlic cut into slices
  • 1/4 cup of finely chopped cilantro
  • 1 cup sliced mushrooms
  • 1 tablespoon of butter
  • wedge of lemon


To marinate the fish: In a large to medium bowl, coat the fish with half a cup of lemon juice and a pinch of salt. Allow to rest in the refrigerator for 10 minutes.

2Heat a pan over medium heat and add one cup of olive oil, garlic and cilantro. Cook just until the garlic has a fried texture, and remove from heat promptly so it does not burn. Set aside in a glass bowl or measuring cup.

In the same pan, melt butter and then add the sliced mushrooms. Add just a sprinkling of salt and pepper to taste and allow to saute until tender on medium heat (about 10 minutes). Reduce the temp to low.

3In a separate frying pan, fry the fish for approximately 10 minutes, ensuring each side is golden brown. Remove from the pan and pour over the fried garlic and cilantro mixture.

4Top the fish with the sauteed mushrooms and squeeze a wedge of lemon over the fish for extra flavor and seasoning.


5Serve with your favorite rice blend.
