When you have a craving for a funnel cake but the fair’s not in town, what do you do? Well, easy… you make some! Every day can be a special day with these fun-sized funnel cakes. For this recipe, we made red, green, and white funnel cakes, but you can make whatever color you like.
- 1 1/4 cups flour
- 1 1/2 tablespoons of sugar
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 1 Teaspoon vanilla extract
- 1 tablespoon of water
- 2 tablespoons vegetable oil
- 2 eggs
- 1 cup of milk
- green and red food dye
- vegetable oil for frying
- 1 cup of powdered sugar for dusting
- 1 teaspoon ground cinnamon
For the funnel cakes, first mix dry ingredients in a bowl. Then, add in vanilla, water, 2 tablespoons of oil, eggs and milk until the batter is smooth and silky.
Divide the batter into 3 separate containers. Add a few drops of food color to two of them, adding green to one and red to the other.
Fill vegetable oil about half-way in two deep-dish iron skillets. Heat the oil to 350 degrees Fahrenheit.
4To fill the funnel, place your middle finger over the tip and pour batter inside. Now, holding the funnel about an inch above the hot oil, release your finger and move it around in zig zag patterns, filling in all bare spots to create one cake.
Once nice and golden brown, flip over and brown the other side. Then, remove with tongs and place on a paper towel-line plate to absorb excess oil.
6Repeat with all the containers of batter.
Combine the sugar with the cinnamon in a bowl and sprinkle the funnel cakes while still hot.
